Is is possible to do helium filled string of pearls on a larger scale - for example 2 of them arching across the whole dance floor and crossing in the middle?

Yes it is and it is simple to construct.
make one arch at the required size and then the second, pull the first down at the middle and then cross the second Arch over it then let the first Arch rise again to sit in position.
